Health-conscious foods are usually considered in the category of monotonous recipes that we don’t want to try until there is no other option left. Gluten-free food products cannot satisfy your taste buds which is the main reason why most people cannot follow a healthy diet despite wanting. If you are also facing the same issue, gluten-free pasta is a great alternative to consider. Pasta is a signature Italian dish available in more than 20 different varieties.
The best thing about pasta is its easy preparation with any kind of recipe whether it is veg or non-veg. Even when you try gluten-free pasta, it will taste exactly the same as the normal pasta. Here we are introducing a gluten-free pasta recipe specifically meant for health-conscious people.
Pasta salad with pesto and eggplant
Just like pasta, pesto also signature Italian sauce originated from the capital city of Liguria. European pine nuts, crushed garlic, coarse Salt from the Mediterranean sea, basil leaves and hard cheese variants like Pecorino Sardo. In order to give it an Italian touch, all these ingredients are blended with olive oil. Here is a complete process on how to gluten free pasta while maintaining all the flavors.
Ingredients to collect
- Gluten-Free Elbows (12 ounces)
- lemon, juiced (1)
- Salt and black pepper to taste
- small eggplant diced (1)
- extra-virgin olive oil, divided (8 tablespoons)
- pine nuts, toasted (¼ cup)
- ice cubes (3 eaches)
- shredded Parmigiano-Reggiano cheese (½ cup)
- fresh basil leaves, chopped (1 bunch)
Directions to prepare
- Boil near elbow pasta in a large pot filled with water and salt. Read the instructions mentioned down its package for exact boiling time because it differ from brand to brand.
- Once it attains al Dante consistency, drain the remaining water and toss your faster in 1 tablespoon of olive oil. Allow it to cool down and go with the next step.
- Roast and eggplant in the oven which is already preheated at 420 degrees Fahrenheit. Before roasting, season 8 properly with olive oil, pepper and salt. It will take hardly 10 minutes to turn the eggplant into golden brown.
- Once done, keep it aside and make a mixture of pine nuts, basil, pepper and salt in the blender. Add some olive oil, tomato puree and ice cubes in the end.
- Transfer the pesto sauce from blender to a large bowl. Add the remaining ingredients including pasta, roasted eggplant and lemon juice.
- Toss them thoroughly and use your cheese as a topping. Shred Parmigiano cheese evenly on the pasta and serve instantly.
Important tips for cooking pasta in a professional style
If you think your pasta at home is not matching the standard of a restaurant, try some easy and useful tips to improve your cooking skills.
- Never use oil while boiling the pasta. It will create a sticky layer that prevents the pasta from cooking evenly.
- Allow adequate time to cool down after boiling the pasta.
- if you don't have all authentic ingredients for making its sauce like marinara or pesto, don't use alternatives because they will not satisfy your taste buds. Instead of that, search online for the suppliers of native Italian sauces to your location.
- Always remember that 1 pasta cannot be considered as an alternative to another one. For instance, penne pasta cannot serve the purpose of rotini pasta because both of them have different hardness consistencies.
While searching for ingredients to cook an authentic Italian dish, it is advisable to get some information about the native Italian brands. Buy gluten-free pasta online because it can provide you with a better option than the local supermarkets.
